Chicken Tortellini Soup
3 tablespoons olive oil
1 pound carrots, chopped
1 large yellow onion, chopped
1 cup chopped celery
1 tablespoon minced garlic
3 quarts chicken broth
1 tablespoon garlic powder
2 teaspoons Italian seasoning
1 teaspoon salt
1 teaspoon ground black pepper
1(9 ounce)package cheese tortellini
6 cups chopped rotisserie chicken
1 (12 ounce package) frozen green peas
In a large Dutch oven, heat olive oil over medium heat. Add carrots, onions, celery and garlic and cook for 8 to 10 minutes,stirring frequently. Add chicken broth, garlic powder, Italian seasoning, salt and pepper. Increase heat to medium-high and bring broth to a boil. Add tortellini; cook for 10 minutes. Stir in chicken and peas; cook for 2 to 3 minutes, or just until chicken is heated through.
