For the Truffles:
1 1/2 C. Flour
1 C. White Cake Mix
1/2 C. Butter - softened
1/2 C. Sugar
1/8 t. Vanilla
2 t. Peppermint Extract
3-4 T Milk
5-6 Drops Green Food Coloring
For the Coating:
Almond Bark or White Chocolate
Vegetable or Olive Oil
Holiday Sprinkles
Instructions
Beat together the butter and sugar. Add cake mix, flour, salt, peppermint extract and vanilla extract. Add milk and food coloring and mix all together well.
Roll the dough into about 1 inch balls and put on cookie sheet (I put parchment paper on mine first). Place in the refrigerator for at least 15 minutes or until they are firm.
Melt the white chocolate or almond bark in the microwave. Watch closely as the white chocolate burns very quickly. I usually add just about 1/2 t. of oil to help with the consistency, especially for white chocolate.
Dip the dough balls in the chocolate/bark and place back on parchment paper to set up. Top with holiday sprinkles while the chocolate/bark is still wet.
