Caitlin's Cake Balls




1 box German Chocolate cake mix
1  16 oz can cream cheese frosting
1 package chocolate bark
toasted coconut for sprinkles


My niece, Caitlin, brought cake balls to our house & I found my new favorite bite sized dessert!  They are too much in every way & pretty simply to make too.  I thought they were the perfect little post for the holiday.... mmm!

The recipe is fairly easy, though you need to get your hands into it!  Simply prepare the cake according to the box, then let it cool completely.  Once cooled, crumbled the cake into a large bowl & gently fold in the icing.  You probably need to use you hands to fully incorporate.

Now, the fun part!  Time to roll the cake mixture into golf ball sized rounds, then place on a cookie sheet.  This should make 40-50 balls.  Place the cake balls into the fridge & allow to cool 2 hours or up to several days.

Then, melt the chocolate according to the package & roll the cake balls into the chocolate.  Using two spoons, place the balls onto wax paper to dry completely. Finally, sprinkle with coconut.

There you have it & you can use any cake you like!  The white balls pictured bellow are formed with confetti cake & rolled in white chocolate, then topped with pastel sprinkles.  Red velvet is also yummy!  Our friend Christi made the same balls, by mashing Oreo cookies instead of cake (also pictured below).  The sky is the limit & they are sure to excite any crowd!
