Mango Peach Cobbler
2-3 mangos
8-10 peaches
2 c uncooked oatmeal
2 sticks melted butter
3/4 c flour
1 c brown sugar
3/4 cup white sugar or subst.
1 Tbls cinnamon
This cobbler can be enjoyed with any fruit you like. Just adjust the sugar accordingly. It was inspired by my sweet friend Trish, who uses a version of it for Thanksgiving with cranberries and apples. It is amazing that way!!
Simply cut up the fruit and layer it in a 9X13 pan. Sprinkle white sugar on top of fruit. In a separate bowl melt the butter and stir in all remaining ingredients. Spoon topping on the fruit and bake in an un-preheated oven at 350 for one hour.
This dessert is great because it can be made ahead and kept in the fridge until time to bake. Then, stick it in the oven an hour before company arrives and your house will smell amazing!
