Collard Greens With A Kick!





1 large package collard greens (washed)
6 strips bacon
4 garlic cloves, sliced thinly
2 cups chicken stock
1/3 cup cider vinegar
2 tbls sugar
3 tbls EVOO


Well, I have to admit, it took me quite awhile to learn to enjoy this famous recipe from the south.  Truth is, collards are wonderful this way and so very good for you too!

In a large pot, heat the EVOO and bacon over Med/High heat, cook until bacon is nice & brown.  Set two pieces aside for platting the greens.  Stir in the garlic & cook another minute.  Now, deglaze the pot with the stock & vinegar.  Then, add sugar, all the greens & partially cover.  S&P.

Lower the heat to Med & cook for 30 minutes or until the greens are tender. Give them a taste... you can always add more vinegar or S&P.  Slide them out onto a dish and tear up the two remaining pieces of bacon to sprinkle on top.

You are as good as in Georgia!
