Sausage Gravy & Biscuits





1 pound sausage (your fave, I like Bob Evans)
4 tbls flour or so
2 - 3 cups milk, whole
salt & pepper
biscuits


Well, no, it's not figure friendly, but boy it sure does take you back to grandma's house!  This old time recipe is so easy, inexpensive & makes my husbands day every time I make it.  It's a great idea for Saturday morning with the family or a Sunday brunch!

So, this is another recipe about technique, but I did try to give measurements.  You will have to just feel it a little bit as you go.  First, brown your sausage in a large heavy skillet over medium high heat.  Now, some sausage doesn't need any oil, but if your pan is dry go ahead and add 2 tbls of canola or other oil.  Brown the sausage & set aside with a slotted spoon, leaving about 3 - 4 tbls of oil in the pan (just eyeball it) & leave all the bits too. (If you sausage did not produce enough oil, which most will automatically, add in several tbls of real butter.)

Next, sprinkle the flour in the pan &, using a wooden spoon, quickly work the flour into the oil.  Don't fear the lumps, just stir away and they will be gone in the end.  Continue to stir vigorously, cooking in the flour for 1 - 2 minutes.  Then, gradually add in your milk & change your spoon out for a whisk.  I start with about 1 cup, then add 1/2 cup at a time until you like the consistency.  Finally, salt & pepper to taste & add back in the sausage.

That's it!   Ready for my easy biscuit secret: Pillsbury Homestyle Biscuits, which you can pick up in your freezer section at the grocery.  I often pair this with my Breakfast Casserole and then some fresh fruit.  Perfect!
