Summer Rhubarb & Strawberry Cobbler
4-6 stalks rhubarb, trimmed & diced
2 pints strawberries, sliced thick
3 c uncooked oatmeal
2 sticks melted butter
1 c flour
1 c brown sugar
3/4 - 1 cup white sugar or subst.
1 Tbls cinnamon
Rhubarb... it's one of my all time favorites! My dad use to grow it outside our home & we couldn't wait for summer when we would see it grow beside the greenhouse door. My brothers and I would pick a stalk, grab a cup of sugar & dip away. For me, the next best thing to a simple stalk is when it's all warmed up in a cobbler!!
This is super easy & in the oven fast! Simply cut up the fruit and layer it in a 9X13 prepared pan. Sprinkle white sugar on top of fruit (or use sugar substitute). In a separate bowl melt the butter and stir in all remaining ingredients until crumbly. Spoon topping on the fruit and bake in an un-preheated oven at 350 for 50-60 minutes.
This cobbler is great for entertaining because it can be made ahead and kept in the fridge until time to bake. Then, stick it in the oven an hour before company arrives and your house will smell amazing!
